AREPAS WITH ROASTED CAULIFLOWER, TOMATOES AND CASHEW DILL SOUR CREAM

INGREDIENTS

Arepas

  • 6 arepas
  • 1 head of cauliflower rinced and chopped into florets
  • Drizzle of olive oil to coat the cauliflowers
  • Salt and pepper to taste
  • 1 diced tomato
  • Fresh dill
  • Lemon wedges

Cashew Dill Sour Cream

  • ¼ cup of plant-based sour cream
  • ¼ cup of cashew dill butter
  • 1 tsp of lemon juice (more to taste)

 

PREPARATION
  1. Preheat oven to 400 degrees.
  2. In a bowl, toss cauliflower florets with olive oil, salt and pepper until they are well coated.
  3. Spread cauliflowers on a baking tray lined with parchment paper and bake for 15 minutes
  4. During this time, prepare the cashew dill sour cream. In a bowl, mix together sour cream, cashew dill butter and lemon. Set aside until ready to serve.
  5. In a large non-stick skillet over medium heat, cook 1 arepa at the time for 2 minutes on each side or until golden brown.
  6. Spread 1 tbsp of sour cream on each arepa. Add the roasted cauliflowers, diced tomatoes, and fresh dill. Garnish with lemon wedge.

 

NOTES
  • This recipe would also work beautifully served as tacos.
