CHIA SEED PUDDING WITH JAM AND ALMOND GINGER BUTTER

PREP TIME: 20 minutes

SERVES: 6

INGREDIENTS

Pudding

  • 1 1/2 cup of full fat coconut milk
  • 1/3 cup of chia seeds
  • 2 tbsp of maple syrup
  • 1 tsp of vanilla extract
  • 12 tbsp of your favourite jam or compote – we used a homemade rhubarb compote

Toppings

  • 12 tbsp of almond ginger butter
  • 6 tbsp of granola – we used this recipe

 

PREPARATION
  1. Add coconut milk, chia seeds, maple syrup and vanilla extract to a bowl. Whisk until well combined.
  2. Add 2 tbsp of your chosen compote into 6 verrines.
  3. Pour chia mixture over the compote, making sure to divide it equally between the verrines.
  4. Refrigerate for 15 minutes (or more). After 15 minutes, take out the verrines from the fridge and add the almond butter and the granolas.
  5. Serve immediately.

 

NOTES
  • You can prepare this the night before (excluding toppings) and place in the fridge until the next morning. The pudding will be even thicker.
