INGREDIENTS
2 slices of sourdough bread
A drizzle of olive oil
½ cup of finely sliced leeks
¼ cup of store-bought marinated eggplants
¼ cup of fresh parsley
1 tbsp of NUT CHEE*SE
Salt and pepper to taste
PREPARATION
In a saucepan, sauté the leeks in olive oil over medium heat until translucent. Add salt and pepper and set aside.
Toast bread.
To assemble sandwich, spread the NUT CHEE*SE on one side. Add leeks, marinated eggplants and parsley.
Garnish with the other slice of bread. Serve immediately.
