ROASTED BABY POTATOES WITH CASHEW DILL SOUR CREAM

COOK TIME: 45 minutes

SERVES: 4

INGREDIENTS

Roasted Baby Potatoes

  • 5 lb of baby potatoes
  • 1 tsp of smoked paprika
  • Salt and pepper to taste
  • Drizzle of olive oil to coat potatoes with spice mix

Cashew Dill Sour Cream

  • ¼ cup of plant-based sour cream
  • ¼ cup of cashew dill butter
  • 1 tsp of lemon juice (more to taste)

 

PREPARATION
  1. Preheat oven to 400 degrees.
  2. Rince potatoes and cut them in half.
  3. In a bowl, toss potatoes with olive oil, paprika, salt and pepper until the potatoes are well coated.
  4. Spread potatoes on a baking tray lined with parchment paper and bake for 45 minutes
  5. During this time, prepare the cashew dill sour cream. In a bowl, mix together sour cream, cashew dill butter and lemon. Set aside.
  6. Serve the potatoes with a dollop of cashew dill sour cream
