TOFU SCRAMBLE TOAST WITH CASHEW DILL BUTTER

SERVES: 4

INGREDIENTS
  • 350 g of extra firm tofu
  • 2 tbsp of nutritional yeast
  • ½ tsp of turmeric
  • Salt and pepper to taste
  • Drizzle of vegetable oil for cooking
  • 2 tbsp of plant milk
  • 4 slices of bread
  • 4 tbsp of cashew dill butter
  • Scallions (to garnish)
  • Fresh dill (to garnish)

 

PREPARATION
  1. Pat dry the tofu brick with a clean dish cloth to remove excess moisture.
  2. In a pan, crumble the tofu and fry it in oil at medium heat for about 1 minute.
  3. Add nutritional yeast, turmeric, salt and pepper and cook 3 to 4 minutes until tofu is well coated with the spices.
  4. Add plant milk and mix until the liquid is fully absorbed. Remove from heat.
  5. Toast the bread, and add cashew dill butter, tofu scramble, scallions and fresh dill. Serve immediately.
