YEASTED WAFFLES WITH PECAN MAPLE BUTTER AND FRESH BERRIES

INGREDIENTS

Waffles

  • 1/2 cup warm water (110 to 115 degrees)
  • 7 g of active dry yeast
  • 2 tsp of brown sugar
  • 2 cups of lukewarm plant milk
  • 1/4 pound of unsalted vegan butter
  • ¼ tsp of salt
  • 1 tsp of pure vanilla extract
  • 2 cups all-purpose flour
  • ½ cup of sweet potato or pumpkin puree

Toppings

  • Fresh berries
  • Pecan maple butter

 

PREPARATION

This recipe is a vegan adaptation of the very talented Ina Garten

  1. Combine the water, yeast, and sugar in a very large bowl (the batter will expand). Allow it to stand for about 5 minutes (the yeast will dissolve and the mixture should start to foam letting you know that the yeast is activated).
  2. Stir in the plant milk, butter, salt and vanilla. Add the flour and whisk until the batter is smooth. Cover the bowl and place in the fridge overnight.
  3. The next morning, heat a waffle iron. Using a spatula, fold in the sweet potato or pumpkin puree to the batter.
  4. Pour ½ cup of the batter (or less if your waffle iron is smaller) on the waffle iron and cook for 5 to 6 minutes on medium heat, until the waffles are golden brown.
  5. Repeat the process until all the batter has been used.
  6. Serve the waffles hot with our signature pecan maple butter and fresh berries.

 

NOTES
  • Once cooked, the waffles can freeze very easily.  Simply pop them in a 350 degree oven for 10 minutes and enjoy!
